My very first attempt at cornbread. I baked it on my stove!
Using a cast iron pot.
The heat setting is relative to whatever stove you will be using but I suggest going with the second to lowest setting especially if you’re using cast iron.
Its one of those trial and error aspects.
1 cup cake flour
1 cup maize meal
3 tsp. baking powder
1 tsp. salt
3 tbsp. sugar
1 egg, beaten
1 cup maas (aka amasi)
1/4 cup oil
Sift together the dry ingredients and add maize meal.
Combine egg, maas and oil then pour into flour mixture and stir to moisten. Pour into greased 10 inch skillet (or as in my case a cast iron pot).
Cover tightly and cook 15 to 25
(Depends on your choice of pot, skillet and stovetop)
Best served warm with butter…

Soooooo, yesterday I was inspired by the recent addition of an Indonesian chica to my family.
When I make food and show her what I’ve cooked, she always asks about rice…..
So, I actually really enjoy rice and she made some fried rice a few days ago that I couldn’t sample with her. (She is in Indonesia and I am in South Africa) which had me whip some up yesterday 🙂
In the pic: fried rice with sliced cabbage and carrots, fried in a mixture of marg and sunflower oil and seasoned with pepper, coriander, fennel and cinnamon sticks.
